I love risotto. I especially love this easy to make risotto recipe. Say goodbye to standing by the stove and stirring constantly for hours. This recipe takes minutes to make delicious risotto in a pressure cooker.
Ingredients:
– 3 Tablespoons butter
– 1 small onion chopped finely
– 1 cup Arborio rice
– 1 cup frozen peas (or mushrooms or both)
– 1 cup chicken or vegetable broth
– 1 1/4 cup dry white wine
– 1/3 cup Parmesan cheese
– Ground pepper to taste
In a pressure cooker, add 2 tablespoons butter and onion. Saute onions until tender, but not brown. Mix in Arborio rice. Add your vegetable of choice. Add your broth and wine. Cover and close. Let cook under high pressure for 7 minutes. When finished, mix in 1 tablespoon butter, Parmesan cheese and pepper. Serve warm.
